CROCKPOT ALMOST LASAGNA

INGREDIENTS

1 Box rotini (or ziti -- any fun pasta will do) 2 Jars pasta sauce (28 Oz -- one with tomato chunks works well) 1 egg 1/2 lb ground beef 1/2 lb sausage 2 tbsp olive oil 1 C. parmesan cheese 1/2 C italian breadcrumbs 1 bag mozzarella cheese 16-20 oz. ricotta cheese 2 eggs 1 C. parmesan cheese 1 1/2 tsp. parsley flakes dash of salt & pepper (to taste)

HOW TO MAKE

Grease the crock pot (or spray with non-stick cooking spray).

Cook the rotini, according to the directions on the packet, and then drain.

Brown and drain the meat.

Toss pasta with olive oil.

Add the pasta sauce to the mixture and toss well.

Stir together the parmesan cheese, breadcrumbs, egg, 1/2 bag mozzarella cheese, and browned meat.

Can-sprinkle lightly with garlic powder.

Beat together the ricotta, 2 eggs, parmesan, parsley and salt & pepper.

Pour half of the pasta/sauce/meat mixture into the crock pot.

Spread the entire ricotta mixture over the first layer of pasta.

Cover the layer of ricotta with the remaining pasta mixture and then cover again with the remaining cheese.

Cover and cook on a low heat setting for 4-6 hours.
